Simple Brie Mashed Potatoes

Brie mashed potatoes make a rich and savoury side dish with your evening meal. These mashed potatoes are straight forward and simple to make.

Brie has a delicious and earthly flavour that tastes delicious is mashed potatoes. As you can imagine, making brie mashed potatoes is straight forward. All you need to do is add a wedge of brie cheese into a big pot of cooked potatoes and mash!

You could also try making tomato relish or simple fermented tomatoes.

Potatoes

A Wedge of Brie

Heavy Cream

Butter

Salt To Taste

Instructions

Cook the potatoes. You can peel them or leave the peels on. I like to cut the potatoes into cubes and then boil them to make the process faster.

While the potatoes cook, remove the rind of the wedge of brie.

Drain the potatoes. Add the brie into the warm potatoes and use a potato masher to combine the cheese and potatoes.

Once combined, mash in the cream, butter, and salt.

You can add the dish into a warm oven to crisp the top of the mashed potatoes, if you desire.

Variation Ideas

Roast Garlic – Pre-heat your oven to 400 degree Fahrenheit or 180 degrees Celsius. Cut off the tops of 1 bulb of garlic. Drizzle the bulb with olive oil and put into the oven for 30-40 minutes. Squeeze the roasted garlic into the brie mashed potatoes for an added garlic flavour.

Rosemary – Sprinkle fresh, chopped rosemary into the mashed potatoes.

Three Cheeses – Shred a ½ cup of two other cheeses of your choice. Add the cheeses into the potatoes as you add the brie, for three cheeses mashed potatoes.
