As I approach the birth of our next baby, I’ve been on the hunt for nutrient rich snacks to have on hand during labour.
Date balls seemed like a good option because there is some research that points to dates being helpful in making labour faster. And dates are a great source of iron. So I thought I would make up some healthy chocolate coconut date balls to snack on.

Whether or not you’re expecting, these are a simple and healthy snack that will nourish your body. They are easy to store in the fridge or freezer and perfect with a cup of coffee or tea.

Ingredients
Medjool Dates – Medjool dates are naturally very sweet and eliminate the need to add processed sugar to this snack. They are also high in fibre and iron.
Nuts Of Your Choice – Almonds, walnuts, and cashews all work great
Sugar-Free Cocoa Powder – Using baker’s grade cocoa powder will ensure that there is no added sugar
Sugar-Free Shredded Coconut – Coconut is a source of healthy fat and fibre. If you don’t have shredded coconut flakes, you can always simply blend up coconut chips
Sugar-Free Peanut Butter – Crunchy or smooth will work!

How To Make Chocolate Coconut Date Balls
Add medjool dates to your food processor and blitz until they come together.
Add your nuts, cocoa powder, shredded coconut, and peanut butter into the food processor.
Blitz until the mixture holds together.
Using your hands or a spoon, roll together the date balls.
Roll each ball in added shredded coconut.
You can eat immediately or put the balls onto a plate and into the fridge for an hour or so to firm up.
Date Ball Variation Ideas
There are endless variations for these date balls. Here are some ideas:
Nut-Free – simply substitute the nuts for pumpkin seeds, sesame seeds, or linseed (also known as flaxseed). Linseed is especially high in fibre and protein.
Alternate Nut Butters – you could swap the peanut butter for almond butter, which has a deeper flavour that would be delicious, or even cashew butter.
Alternate Nuts – you could try adding brazil nuts, macadamia nuts, or whatever kind of nuts you have on hand. I often just use a nut mix in this recipe!
