You can add cinnamon extract to many baked goods – think of it as a substitute for vanilla extract. It tastes delicious in muffins, breads, pies, cookies, and cakes. You could also add it to your favourite hot beverage like hot chocolate, tea, or a fall cocktail.
Here are some of my favourite ways to use it:

It usually takes 6 – 10 weeks or 1.5 – 2.5 months to make cinnamon extract. Once the liquid smells strongly of cinnamon, you can remove the cinnamon sticks.
If stored in a cool, dark place it can last for 3-4 years. Make sure to keep a tight lid on your extract to maximize freshness.
Cinnamon extract is a liquid of concentrated cinnamon flavour.
You can use food-grade liquid glycerin and water – but if you don’t drink alcohol, don’t worry. When you use cinnamon extract in baked applications, the alcohol will be baked off.

Tips
It’s best to use cinnamon sticks when making homemade cinnamon extract, rather than ground cinnamon. This is because ground cinnamon is difficult to strain off the liquid and will cause your extract to be gritty.
Make sure to use organic cinnamon sticks to avoid pesticides in your extract.

Instructions
Add 4-5 organic cinnamon sticks (or however many you need to fill your jar) to clean glass jar. If you’re using a smaller or larger jar than me, simply add as many cinnamon sticks as you can to the jar.
Cover the sticks with vodka until they are completely submerged.
Tighten a lid on the jar and set it in a cool, dark place for 6-10 weeks. Aim to shack the jar once a day to keep everything moving.
Around 6 weeks, open the jar and smell the extract. If it smells strongly of cinnamon and is a rich brown colour, your extract should be ready.
You can check the extract earlier to check if it’s ready – if you leave cinnamon sticks in vodka too long, the extract can become bitter. Mine have always taken at least 6 weeks (I use a pint-sized mason jar).
