Lacto-fermented carrots are a delicious and gut healthy snack. A salt water brine is added to chopped carrots to created a simple treat.

Lacto-fermented carrots are so simple to make. Don’t be deterred if you’ve never fermented before. It’s easy. All you need is salt, water, carrots, and a bit of time – then you will have a tasty and gut healthy snack for yourself and your family.

You could also try making these fermented tomatoes.

I recently found an extra large bag of organic carrots that had been reduced at our local supermarket. Unable to say no to a bargain, I want to fermented the carrots to make sure they last until we’re able to eat them.

Fermenting Weight or Zip Loc Bag

Instructions

Wash and peel the carrots.

Chop the carrots into carrots sticks.

Add the carrots into a glass mason jar. Make sure to pack it tightly.

Mix together the salt and water until the salt is dissolved.

Once the water is room temperature (not hot), pour the water overtop of the carrots.

Place a weight on top of the carrots to keep them below the salt water.

Place a loose lid on top, to allow gasses to escape the jar as things ferment.

Leave the jar to sit on the counter for about 4-7 days. You can taste the carrots to see if you like the flavour.

Once you’re happy with the flavour, remove the fermenting weight, and tighten the lid. Store in the fridge or cold storage (under 55 degrees F) for up to three months.

Expert Tips

The two key things with fermenting vegetables is 1) to use enough salt in the brine and 2) to keep the vegetables below the brine completely while fermenting is happening.

You need to use enough salt to ensure no bad bacteria grow in the brine, and for the same reason you need to keep the veggies totally submerged.

Two tablespoons per quart of water is a good ratio.
