Comforting Sweet Potato Casserole With Walnuts

Toasted walnuts are combined with melted butter and layered on top of mashed sweet potatoes to create a warm and comforting side dish.

Ingredients
  

  • Sweet Potatoes – 4 large
  • Maple Syrup – 3/4 cup
  • Eggs – 2
  • Vanilla – 1 teaspoon
  • Cinnamon – 2 teaspoons
  • Salt – a pinch
  • Heavy Cream – 1/2 cup
  • Topping
  • Coconut Sugar 3/4 cup
  • Butter – ½ cup
  • Flour – 1/3 cup
  • Walnuts – 1 cup

Method
 

  1. Roast the sweet potatoes in the oven. I do this by adding unpeeled sweet potatoes straight onto the oven rack and baking them at 350/180 for 45 minutes.
  2. Allow the roasted sweet potatoes to cool, and then peel and mash them with a fork.
  3. Add the maple syrup, eggs, vanilla, cinnamon, salt, and heavy cream to the sweet potatoes and mix until combined.
  4. Add the sweet potato mixture to a baking dish.
  5. Use a knife to chop the walnuts. Add the chopped walnuts to a bowl and add to them the melted butter, coconut sugar, and flour. Mix until well-combined.
  6. Spread the walnut topping across the sweet potatoes.
  7. Add to the oven and bake for 30-40 minutes.
