- Roast the sweet potatoes in the oven. I do this by adding unpeeled sweet potatoes straight onto the oven rack and baking them at 350/180 for 45 minutes.
- Allow the roasted sweet potatoes to cool, and then peel and mash them with a fork.
- Add the maple syrup, eggs, vanilla, cinnamon, salt, and heavy cream to the sweet potatoes and mix until combined.
- Add the sweet potato mixture to a baking dish.
- Use a knife to chop the walnuts. Add the chopped walnuts to a bowl and add to them the melted butter, coconut sugar, and flour. Mix until well-combined.
- Spread the walnut topping across the sweet potatoes.
- Add to the oven and bake for 30-40 minutes.

If you want a quick and simple treat, you can make only the roasted walnut topping. The toasty, sugary nuts make a delicious snack.
