Toasted walnuts are combined with melted butter and layered on top of mashed sweet potatoes to create a warm and comforting side dish.

As leaves begin to fall and the days become shorter, sweet potato casserole with walnuts is exactly what I begin to crave. It’s a simple and warm side dish that goes well alongside brie mashed potatoes or vanilla spice eggnog.

Sweet potatoes are already sweet so this recipe uses only a bit of maple sugar and a few other simple ingredients. I hope you enjoy it!

PS – if you want a quick and simple treat, you can make only the roasted walnut topping. The toasty, sugary nuts make a delicious snack.

How Long Does Sweet Potato Casserole Last?

This will last about a week in an airtight container in the fridge or 3 months in the freezer.

Can I Make This Recipe Ahead Of Time?

You can prepare this recipe ahead of time by creating the recipe a few days in advance and storing it in the fridge. Reheat by adding it to the oven for 15-20 minutes covered.

You can also create the sweet potato base and walnut topping in advance and storing them separately in the fridge. Then combine the two and bake on the day you would like to serve it.

Sweet Potatoes

Maple Syrup

Eggs

Vanilla

Cinnamon

Salt

Heavy Cream

Topping

Coconut Sugar

Butter

Flour

Instructions

Roast the sweet potatoes in the oven. I do this by adding unpeeled sweet potatoes straight onto the oven rack and baking them at 350/180 for 45 minutes.

Allow the roasted sweet potatoes to cool, and then peel and mash them with a fork.

Add the sweet potato mixture to a baking dish.

Use a knife to chop the walnuts. Add the chopped walnuts to a bowl and add to them the melted butter, coconut sugar, and flour. Mix until well-combined.

Spread the walnut topping across the sweet potatoes.

Add to the oven and bake for 30-40 minutes.
