Healthy Beetroot Relish Recipe

Ready in 15 minutes, this healthy beetroot relish recipe is a fantastic way to use up beets well into the fall. It’s simple to make and is a vibrant side dish.

Ingredients
  

  • 2 Raw Beetroots
  • 1/2 Onion
  • 2 Apples
  • 2 Tablespoons Ginger
  • 1/2 Cup Vinegar
  • 1/4 Cup Honey
  • 1 Teaspoon Salt

Method
 

  1. Boil the beetroot in water until soft. Remove the exterior skin. You can also roast the beetroots to have added flavour.
  2. Finely dice the cooked beets.
  3. Chop the onion and apples into small pieces and combine them with the beets.
  4. Grate the ginger and add into the mixture.
  5. Pour the honey overtop the mixture and add the salt and vinegar.
  6. If you can wait, set in the fridge overnight for everything to marinate.
  7. Enjoy!
