Instructions
Boil the beetroot in water until soft. Remove the exterior skin. You can also roast the beetroots to have added flavour.
Finely dice the cooked beets.
Chop the onion and apples into small pieces and combine them with the beets.
Grate the ginger and add into the mixture.
Pour the honey overtop the mixture and add the salt and vinegar.
If you can wait, set in the fridge overnight for everything to marinate.
