Simple Chocolate Coconut Date Balls Recipe

These chocolate coconut date balls take less than 10 minutes to make and use only 5 simple ingredients. They are perfect for a quick boost of energy, fibre, and protein.

Ingredients
  

  • 15 - Medjool Dates
  • 1 Cup - Nuts
  • ¼ Cup - Sugar-Free Cocoa Powder
  • 2 Cups - Shredded Coconut
  • 1/3 Cup - Peanut Butter
  • Water as needed

Method
 

  1. Add medjool dates to your food processor and blitz until they come together.
  2. Add your nuts, cocoa powder, shredded coconut, and peanut butter into the food processor.
  3. Blitz until the mixture holds together.Using your hands or a spoon, roll together the date balls.
  4. Roll each ball in added shredded coconut.
  5. You can eat immediately or put the balls onto a plate and into the fridge for an hour or so to firm up.

Nut-Free – simply substitute the nuts for pumpkin seeds, sesame seeds, or linseed (also known as flaxseed). Linseed is especially high in fibre and protein.
What If The Date Balls Do Not Hold Together?
If the date balls are crumbly, slowly add in a bit of water into the food processor. You will likely not need much so make sure to pour only a small amount and then blitz everything.
What If The Date Balls Are Too Liquidy?
If your date balls are too liquidy, you can add some oats into your food processor and blitz. The oats will absorb some of the liquid and provide added fiber to the snack.
How Long Do Chocolate Coconut Date Balls Last?
These chocolate coconut date balls will last about a week in an air-tight container in the fridge before becoming dry.
