Ingredients

  • 4 Organic Eggs
  • 1 Cup Heavy Cream
  • 2 Cups Milk
  • 1 Teaspoon Nutmeg – more for garnishing if you would like
  • 2 Teaspoons Vanilla Extract
  • 2 Teaspoons Maple Syrup
  • 3 Oz Spiced Rum

Method

  1. Separate the egg yolks and whites. Add the egg yolks to a large bowl.
  2. Pour the maple syrup into the egg yolks and use a fork to whisk together.
  3. To the egg yolks and maple syrup, add the milk, cream, vanilla extract, spiced rum, and nutmeg.
  4. Use a mixer to whisk the egg whites until hard peaks begin to form.
  5. Pour the vanilla spice eggnog into a mug, and add a dollop of egg whites to the top. You can sprinkle a tiny bit of nutmeg on top for a pretty finish.
  6. You can drink eggnog warm or cold – if you prefer it to be cold, save the last step of whisking egg whites until just before serving. To heat the eggnog, add it to the saucepan and use low heat to warm the mixture.
