FAQ

Why Use Einkorn Flour?

Einkorn wheat has never been hybridised or genetically modified. For that reason it remains high in protein, dietary fibre, vitamins, and antioxidants. Also, unlike white flour and other modern grains, most people with gluten sensitivities can consume baked goods made with einkorn flour. This is because einkorn does not contain the gluten proteins that can cause gluten intolerance symptoms.

If you do have gluten sensitivities, einkorn flour is a great option. You could also try making sourdough banana bread, because fermenting dough helps to reduce the gluten in modern flours, like all purpose white flour.

Does Einkorn Flour Taste Like Regular Flour?

Not exactly – einkorn flour gives baked goods and bread a wonderful deeper, nuttier flavour than all purpose white flour.

Tips

Do not over mix the batter. Whole wheat flours like einkorn will naturally produce denser loaves and over mixing batter can make the loaves even denser. To avoid this, mix the batter until just combined.

Einkorn Flour

Baking Soda

Salt

Maple Syrup – or granulated sugar of your choice

Bananas – mashed

Coconut Oil

Eggs

Vanilla

Optional Add-Ins

Chocolate Chops

Chopped Nuts – like walnuts or pecans

Instructions

Preheat the oven to 350 F or 180 C and grease your loaf tin with butter.

Combine the flour, salt, and baking soda in a bowl.

In a separate bowl, mash the bananas. Then add softened coconut oil, maple syrup, and butter to the bowl.

Add the eggs and vanilla, and combine.

Add the dry ingredients to the wet ingredients and mix until just combined.

If you’re adding chocolate chips or chopped nuts, fold them in until just combined.

Pour the batter into your tin and put it into the oven. Let it bake for 45-50 minutes. Dip a shark knife or toothpick into the centre of the loaf. It should come out clean if it’s done. I like to under bake mine slightly so it’s really moist.

Allow the einkorn banana bread to cool for about 5 minutes before removing it from the tin.

This will last about 4 days in an airtight container on the countertop (about a week in the fridge) and can be frozen for 2-3 months.

  • Baking Soda – 1 teaspoon
  • Salt – 1 teaspoon
  • Maple Syrup – 2/3 cup 145 grams
  • Overripe Bananas – 4 mashed
  • Butter – softened – ¼ cup 45 grams
  • Coconut Oil – 1/3 cup 68 grams
  • Eggs – 3
  • Vanilla – 1 teaspoon
  • Optional Add-Ins – 1 cup

Method
